Oat Pancakes On The Menu – Gluten Free And Dairy Free Because… We Can!

The boys were craving pancakes so I made them regular ones, but I didn’t want to deprive myself, so I opted for these yummy oat pancakes which have now become an absolute favorite!

It’s quick, simple and 100% my recipe! Yeah! Hahaha, I’m gloating!

Before We Begin:

Please note: Use approximate measurements for the perfect homemade pancakes!

On To The Oat Pancakes!

Ingredients:

  • 1 cup rolled oats
  • 1 cup almond milk
  • 1 egg
  • 1 tsp olive oil
  • 1 tsp dark brown sugar, you can use Stevia
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Add a dash of cinnamon powder & vanilla extract if you wish

Method:

  1. Blend all the ingredients until they are well combined. I used an immersion blender & blitzed.
  2. Fry as you would regular pancakes! I poured some light maple syrup on top for the weekend and topped off with berries or bananas, of course!

Hope this quick recipe adds a little fun, flavor and color to your breakfast table. You can enjoy this as an evening snack too with a cup of hot coffee or chai to give you that extra boost!
