The chocolaty nut and seed bar recipe is one to cater to all those who with a sweet tooth that cannot be curbed. Its a healthy way to get those meetha cravings out of the way since it makes sure you get the nutrients you are required to in your diet.
Ingredients:
½ cup cashew nuts
½ cup almonds
½ cup dried fruits, chopped
1 ½ cups puffed rice
½ cup pumpkin/sunflower seeds
½ cup shredded coconut
1/3 cup honey (or less if you don’t want it sweet)
½ cup almond or cashew nut butter
100 grams dark chocolate
Method:
Blend all the dry ingredients so there are no large pieces. Start with the nuts, then the puffed rice, add in the seeds and coconut. Add in the dried fruit last as it is sticky.
In a pan heat the nut butter and honey on low heat until it melts and is a liquid. If it is too thick you can add a spoon of water. Then add this into the dry ingredients and mix until fully coated.
Line a baking tray with paper and spoon the mixture on. Use a spatula to flatten so it’s all the same level.
Melt the chocolate in a bowl over some hot water. Spoon this over the nut and seed mixture and refrigerate for 2-3 hours. Cut into pieces and there you have it, your chocolaty nut seed bars are ready to serve! This should be stored in the refrigerator or the chocolate will melt.
