Carom (Ajwain) 1/2 Tbsp
Red Chilli powder 1 Tbsp
Cumin Seed (Saabut Zeera) 1/2 Tbsp
Whole Red Peppers (8-10)
Saabut Garam masala to taste
Salt to taste
Ginger Garlic Paste 1 Tbsp
Lemon Juice 2 Tbsp
Yogurt 4 Tbsp
Raw papaya 1 cup
2 Tbsp Cooking Oil
Method:
Add all dry ingredients into a mixer and grind into a powder. Then add 2 Tbsp of this ground powder to the ginger garlic paste, yogurt and raw papaya. Mix well.
Pound the chops well on both sides. Then dip these into the prepared marinade and with clean hands, rub in the marinade on all sides.
Add the cooking oil and mix well again.
The chops can now be left in the marinade for at least 2 hours. For best results, refrigerate overnight.
Heat grill before placing the chops on it. (Try to bring them to room temperature before grilling). Turn the chops over to grill evenly, brushing them with oil on both sides till meat is tender and cooked through.
For Sauteed Vegetables:
Heat 2 Tbsp Oil in a frying pan. Add 1 cup chopped garlic, 1 cup broccoli, 1 cup mixed vegetables. Sautee over open flame. Add salt to taste. A pinch of dried oregano.
