A new day comes with a new recipe! Yes, this time I made crispy aaloo donuts as a side dish for Eid. Although I shouldn’t say it myself: but Oh, they were SO delicious. They are also very easy to make and suitable for vegetarians.

This is not only a side dish which can be made for Eid, but also for any daawat or high tea and want one extra fun snack at the table. It isn’t very time consuming and you can make it quickly! To start off you’ll be needing some as ingredients for the donuts themselves and for the batter. Don’t worry, we’ll walk you through it, step by step and treat yourself and your family to these delicious aaloo potatoes!
Ingredients for the aaloo donuts:
- Peeled and boiled potatoes (1/2 kg)
- A cup of breadcrumbs
- 3 tbs cornflour
- 1tsp roasted & crushed Zeera (cumin seeds)
- 1 tbs chicken powder (use a crushed chicken cube)
- A half tbs laal mirch powder (Red chilli powder)
- 1/2 tbs onion powder
- 1 tsp Kali mirch powder (Black pepper powder)
- 1 tsp namak (Salt)
- 1 egg
- 1 chopped medium onion
- A herb of your choice (1-3 tsp) eg. dried oregano or whatever is easily available
Ingredients for the batter:
- 3 tbs Maida (All-purpose flour)
- 1/2 tbs methi ( dried fenugreek leaves)
- 1 tsp Paprika powder
- Namak (salt) to taste
- 3 tbs water or as much as required
- One whisked egg
- One cup breadcrumbs
- Cooking oil for frying
Instructions:
- Grab a bowl and add the peeled and boiled potatoes .
- Mash well by using a masher (if you’re stressing or mad at someone, then see this as a therapeutic step, nikaal dein apna saara ghussa!)
- In the mashed potatoes, add the breadcrumbs, cornflour, onion powder, zeera, laal mirch (paprika), black pepper powder, namak (salt), pyaaz (onion), herbs, egg and start combining with a spoon or spatula.
- Leave it covered with a tissue or lid for ten minutes.
- Put a tiny amount of oil in a small cup and grease your hands with oil. Start taking small amounts of the mixture and shape it into balls. Since we’re not making koftay (meatballs), but donuts, flatten the ball with the palm of your hand and make the shape of a donut. You can use your index finger to make a whole in the middle.
- Prepare the batter for frying: pick a bowl and add the maida (flour), paprika powder, methi (fenugreek) namak (salt) and add water. Start whisking with a whisker to make a thin paste.
- Add the whisked egg and whisk again.
- Dip the donuts in the whisked mixture and coat it with breadcrumbs for a crispy covering.
- When you are about to fry the donuts, make sure to grab a frying pan and preheat the cooking oil (since oil takes time to heat up). Keep the flame on medium to avoid dark spots on your donuts or to prevent them from burning.
- Fry the donuts until they’re golden brown.
- Serve with any sauce of your choice and enjoy!
