Ramazan is a time when everyone’s inner chef awakens and you suddenly want to make a try out a new recipe every day for iftaar! Are you are trying to steer away from having our traditional pakoras and samosas every day and looking to try something else (read: healthier), the recipe we have for you today will be a perfect alternative!

Dietician Fareeha Jay shared with us this mouth-watering, healthy, and quick recipe that can be easily replicated for iftaar without you worrying about gaining a few extra pounds!
Let’s start with the ingredients.
Ingredients For The Chicken
. 500 g Chicken
. 2 tablespoon Rapeseed oil
. 1 teaspoon Ginger paste
. 1 teaspoon Garlic paste
. 3-4 Green chillies (optional)
. ½ teaspoon Cumin seeds
. 2 Tomatoes
. ¼ Cup of water
. 2 tablespoon Soy sauce
. 3 tablespoon White vinegar
. 1 low salt Chicken stock cube
. ½ teaspoon Red chilli flakes (optional)
. 1 teaspoon Coriander powder
. 150 ml Natural yogurt
½ teaspoon Black pepper
Ingredients For The Vegetables
. 1 tablespoon Rapeseed oil
. 1 teaspoon Ginger paste
. 1 teaspoon Garlic paste
. 2 chopped Green chillies (optional)
. ½ teaspoon Cumin seeds
. 1 Yellow pepper
. 1 Red pepper
. 1 Green pepper
. 1 Red onion
. 1 White onion
. ½ teaspoon Salt
. ½ teaspoon Garam masala
We have jotted down the method as 10 pointers so it’s easier for you to follow!
Method
1. Heat the oil in a pan over medium heat. Add ginger paste, garlic paste, chopped green chilies, and cumin seeds. Stir fry for 2 minutes.
2. Add tomatoes and water. Mix and cover the pan. Simmer for 5-7 minutes.
3. Remove the lid and cook on high flame for a couple of minutes. Add the chicken and cook for another 8 minutes.
4. Add soy sauce, vinegar, chicken stock cube, red chili flakes, coriander powder, and mix well. Add yogurt and cook until dry.
5. Add the black pepper and cook for further 2 minutes.
6. Put the chicken aside and in a separate pan, prepare the vegetables.
7. Heat the oil in a pan over medium heat. Add ginger paste, garlic paste, chopped green chilies, and cumin seeds. Stir fry for 2 minutes.
8. Add all the vegetables. Stir fry for a few minutes leaving a crunch in the vegetables.
9. Sprinkle garam masala and salt.
10. Mix chicken in the vegetables and cook for a minute.
